Minced mutton (goat mince, ground goat)500 g lamb mince
Rice⅓ cup, rinsed
Onion1 large, grated
Chickpeas, dry½ cup, soaked overnight
Potato3 medium, halved
Aloo bukhara (dried sour plums or prunes)6 dried sour plums
Saffrona pinch, steeped
Turmeric (ground turmeric)½ tsp
Mint leaves1 tsp dried
Beef stock (beef broth)1.8 litres
Black pepper½ tsp

- 1Simmer the chickpeas in the stock until nearly tender.
- 2Mix mince, rice, grated onion, pepper and salt. Knead well.
- 3Shape into 5 big balls, each pressed around a sour plum.
- 4Lower the meatballs into the simmering stock with potatoes, turmeric and saffron. Cook gently until cooked through.
- 5Sprinkle with dried mint and serve one meatball per bowl with broth, chickpeas and potato.
