Ingredients

8 servings
Maida (all-purpose flour, plain flour)4 cups
Water1¼ cups, warm
Salt1 tsp
Cooking oil (vegetable oil)1 tbsp

Method

5 steps
  1. 1Mix flour, salt, oil and warm water into a soft dough and knead 8 minutes.
  2. 2Cover and rest 30 minutes.
  3. 3Divide into 8 and roll each as thin as you can, about 35 cm across.
  4. 4Cook on a very hot dry tawa or inverted kadai for 30 to 45 seconds per side.
  5. 5Stack under a damp cloth as you go.
Serve it like this

Fold sheets into quarters and stack in a basket. Use to wrap kebabs, herbs and cheese.
