Ingredients

4 servings
Maida (all-purpose flour, plain flour)2½ cups
Water⅔ cup
Salt1 tsp, divided
Spinach1 bunch, finely chopped
Coriander leaves (cilantro)1 bunch, chopped
Dill leaves1 bunch, chopped
Spring onion (green onion, scallion)1 bunch, chopped
Sumac2 tsp, plus more to serve
Butter3 tbsp, melted
Curd (plain yogurt, natural yoghurt)⅔ cup, to serve

Method

5 steps
  1. 1Mix flour, half the salt and water into a soft dough. Knead and rest 20 minutes.
  2. 2Mix the greens with sumac and the rest of the salt just before filling.
  3. 3Roll small balls into very thin 18 cm circles. Spread greens on one half, fold over and press the edge shut.
  4. 4Cook on a hot dry tawa until spotted on both sides, then brush generously with butter.
  5. 5Stack and serve hot with yoghurt and a sprinkle of sumac.
Serve it like this

Fold into half moons, stack on a plate and dust with sumac. Serve with a bowl of yoghurt.
