Ingredients

Rava (semolina)1½ cups fine semolina
Waterabout 2/3 cup, for the dough
Saltto taste
Minced beef (beef mince, beef or buff keema)300 g
Onion1, finely chopped
Baharat1 tsp
Celery4 stalks with leaves, sliced
Zucchini (courgette, baby marrow)2, chunks
Spinach1 bunch (or chard), chopped
Garlic4 cloves
Lemon juice⅓ cup
Sugar2 tsp
Chicken stock (chicken broth)1.5 litres
Cooking oil (vegetable oil)1½ tbsp

Method

5 steps
  1. 1Mix semolina and a pinch of salt with water into a soft, pliable dough. Cover and rest 30 minutes.
  2. 2Fry the onion in half the oil, add beef, baharat and salt and cook until browned. Cool.
  3. 3With wet hands flatten walnut sized pieces of dough, add filling, and close into smooth balls.
  4. 4Sweat celery and garlic in the remaining oil, add stock, zucchini, lemon juice and sugar and simmer.
  5. 5Add the spinach and dumplings and simmer gently until they float and the dough is tender.
Serve it like this

Serve in deep bowls with three or four dumplings and plenty of sour broth. White rice alongside.
