Ingredients

6 servings
Chicken, curry cut (bone in chicken, small pieces)500 g chicken pieces
Water8 cups
Dried shiitake mushroomsa handful dried porcini or shiitake, soaked
Bay leaf (indian bay leaf)1
Allspice3 berries
Pearl barley½ cup, rinsed
Butter1 tbsp
Onion1, chopped
Carrot2, diced
Celerya little celeriac or 2 sticks, diced
Potato2, diced
Salt1½ tsp
Black pepper½ tsp
Dill leaveschopped

Method

4 steps
  1. 1Simmer chicken with water, soaked mushrooms and their strained liquid, bay and allspice for 45 minutes.
  2. 2Toast barley in butter for 2 minutes, add to the broth and simmer 20 minutes.
  3. 3Add onion, carrot, celery and potato. Simmer 15 minutes.
  4. 4Shred chicken back in, season and finish with dill.
Serve it like this

Serve in deep bowls with plenty of dill and black pepper. Hot, with rye bread and butter.
