Ingredients

4 servings
Coriander leaves (cilantro)2 packed cups, chopped
Besan (chickpea flour, gram flour)1¼ cups
Rice flour2 tbsp
Sesame seeds1 tbsp
Ginger garlic paste2 tsp
Green chilli2, crushed
Turmeric (ground turmeric)½ tsp
Red chilli powder (indian red chili powder)1 tsp
Cumin seeds½ tsp
Sugar1 tsp
Saltto taste
Cooking oil (vegetable oil)4 tbsp, to grease and shallow fry

Method

5 steps
  1. 1Mix the coriander, besan, rice flour, half the sesame, ginger garlic paste, chilli, spices, sugar, salt and 1 tbsp oil. Add water slowly to make a thick, soft dough.
  2. 2Shape into a log or press into a greased plate and steam.
  3. 3Let it cool completely, then slice into squares or rounds.
  4. 4Shallow fry in hot oil with the remaining sesame until crisp on both sides.
  5. 5Serve hot with green chutney or tomato ketchup and tea.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
