Ingredients

Besan (chickpea flour, gram flour)¾ cup
Onion2 medium, chopped
Garlic4 cloves, crushed
Green chilli2, chopped
Cooking oil (vegetable oil)3 tbsp
Mustard seeds1 tsp
Cumin seeds½ tsp
Asafoetidaa pinch
Turmeric (ground turmeric)½ tsp
Red chilli powder (indian red chili powder)1 tsp
Curry leaves1 sprig
Coriander leaves (cilantro)a handful, chopped
Saltto taste
Water½ cup

Method

5 steps
  1. 1Heat the oil. Add mustard seeds, cumin, asafoetida and curry leaves, then the garlic and green chilli.
  2. 2Add the onion and cook until soft and just turning pink. Stir in turmeric and chilli powder.
  3. 3Sprinkle in the besan a little at a time, stirring constantly. Season with salt.
  4. 4Sprinkle the water over in two goes, stir, cover and cook on low, stirring now and then.
  5. 5Uncover and stir until dry and crumbly. Finish with coriander.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
