Classic ukadiche modak.

Ingredients

5 servings
Rice flour1 cup, fine
Water1 cup
Ghee1 tbsp plus more to serve
Salta pinch
Fresh grated coconut2 cups, fresh
Jaggery¾ cup, grated
Cardamom½ tsp
Poppy seeds (white poppy seeds)1 tsp, optional

Method

5 steps
  1. 1Cook coconut and jaggery in a pan, stirring, until the jaggery melts and the mixture turns sticky. Add cardamom and poppy seeds. Cool.
  2. 2Boil water with a teaspoon of ghee and salt. Add rice flour, stir, cover and rest off the heat for 5 minutes.
  3. 3Knead the warm dough with greased hands until very smooth.
  4. 4Flatten a lemon sized ball into a thin cup, fill, pleat the edges and pinch into a peak.
  5. 5Steam on a greased plate or banana leaf for 12 minutes. Serve with ghee.

Serve in small bowls, warm or chilled as it likes best, with a few chopped nuts on top.
