Ingredients

2 servings
Soybeans¾ cup dried, soaked overnight
Water3 cups cold
Sesame seeds2 tbsp, toasted
Saltto taste
Wheat noodlesthin wheat noodles
Cucumbermatchsticks
Tomato1 small, in wedges
Ice cubesa few

Method

5 steps
  1. 1Boil the soaked beans in fresh water for 10 to 12 minutes, then drain and cool in cold water.
  2. 2Rub off the skins if you want it extra smooth.
  3. 3Blend the beans with the sesame and cold water until very smooth. Chill.
  4. 4Cook the noodles, then rinse in icy water and drain.
  5. 5Put the noodles in bowls, pour over the cold soy milk, add ice and top with cucumber and tomato. Salt at the table.
Serve it like this

Serve in a chilled bowl with the soy milk almost covering the noodles, ice, cucumber and a tomato wedge on top. Kimchi alongside.
