Ingredients

10 servings
Maida (all-purpose flour, plain flour)4 cups
Sugar½ cup + 2 tbsp
Baking powder2 tsp
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Cardamom1½ tsp
Salta pinch
Butter4 tbsp, cold
Egg1
Buttermilk¾ cup + 2 tbsp
Cooking oil (vegetable oil)for deep frying

Method

5 steps
  1. 1Mix the flour, sugar, baking powder, baking soda, cardamom and salt. Rub in the cold butter.
  2. 2Add the egg and buttermilk and knead briefly to a soft dough. Rest 15 minutes.
  3. 3Roll 5 mm thick and cut into diamonds about 4 by 10 cm with a pastry wheel. Cut a slit in the centre and pull one end through.
  4. 4Fry in oil at 170°C, a few at a time, turning once.
  5. 5Drain on paper and cool slightly before eating.
Serve it like this

Pile on a plate lined with paper, still slightly warm. Serve with strong coffee or cold milk.
