Ingredients
Maida (all-purpose flour, plain flour)2¾ cups
Instant dry yeast2 tsp
Milk¾ cup + 2 tbsp, warm
Sugar2 tsp
Cooking oil (vegetable oil)2 tbsp
Salt1½ tsp, divided
Mozzarella2½ cups grated (or sulguni)
Feta cheese1 cup crumbled (or imeruli cheese)
Egg5 (4 for the centres, 1 to brush)
Butter4 thick pats
Method
6 steps
1Whisk warm milk, sugar and yeast. Add flour, oil and 1 tsp salt and knead 8 minutes into a soft dough. Cover and let it rise.
2Mix the mozzarella and feta with 2 tbsp water. Heat the oven to 240°C with a tray inside.
3Divide the dough into 4. Roll each into an oval about 25 cm long. Roll the two long sides inward to make thick rims, pinch the ends and twist them into points.
4Pile the cheese into each boat, brush the rims with one beaten egg and bake on the hot tray.
5Make a hollow in each cheese bed, slip in an egg yolk or whole egg and bake 1 to 2 minutes more.
6Drop a pat of butter on each, sprinkle the remaining salt lightly and serve at once.
Serve it like this
Serve each boat whole on a wooden board, butter melting over the yolk. Stir at the table and tear off the crusty rim to dip.
