Ingredients

Puff pastry500 g sheets
Egg5 boiled and halved, plus 1 for wash
Coconut oil2 tbsp
Onion3, thinly sliced
Ginger2.5 cm, chopped
Garlic3 cloves
Green chilli2, chopped
Curry leavesa sprig
Tomato1, chopped
Kashmiri chilli powder1½ tsp
Coriander powder (ground coriander)1 tsp
Garam masala½ tsp
Turmeric (ground turmeric)¼ tsp
Salt1 tsp

Method

4 steps
  1. 1Cook onions slowly in coconut oil with ginger, garlic, chilli and curry leaves until deep golden.
  2. 2Add tomato and spice powders and cook until thick and dry. Cool.
  3. 3Cut pastry into 10 rectangles, spoon masala, place half an egg cut side down, fold and seal. Brush with beaten egg.
  4. 4Bake at 200 C for 20 to 25 minutes.
Serve it like this

Serve warm on a plate with ketchup and a glass of chai or Sulaimani. Cut one open to show the egg.
