Ingredients

Maida (all-purpose flour, plain flour)1¼ cups
Ajwain (carom seeds)¼ tsp
Saltto taste, divided
Waterabout 1/4 cup
Cooking oil (vegetable oil)for frying, about 1/4 cup absorbed
Chickpeas, boiled1½ cups, boiled
Moong sprouts (mung bean sprouts)1 cup
Potato1 large, boiled and cubed
Onion1 small, chopped
Tomato1 small, chopped
Curd (plain yogurt, natural yoghurt)¾ cup, whisked
Sugar1 tsp, for the curd
Sev½ cup
Pomegranate seeds¼ cup arils
Tamarinda small lemon sized ball, for saunth
Jaggery¼ cup, for saunth
Mint leavesa handful, for green chutney
Coriander leaves (cilantro)a big handful, divided
Green chilli1 to 2
Chaat masala1½ tsp
Cumin powder (ground cumin)1 tsp, roasted
Red chilli powder (indian red chili powder)½ tsp
Black salt¼ tsp

Method

5 steps
  1. 1Knead maida, ajwain, a pinch of salt, a spoon of oil and water into a stiff dough. Rest 15 minutes.
  2. 2Roll thin, cut 12 rounds, press between two small steel katoris and fry at 170 C until crisp; slip out the moulds.
  3. 3Simmer tamarind and jaggery with a cup of water, strain and thicken; blend mint, coriander, chilli and salt for green chutney.
  4. 4Toss chickpeas, sprouts, potato, onion and tomato with chaat masala, cumin, chilli and black salt.
  5. 5Just before serving, fill katoris, spoon over sweet curd and both chutneys, and top with sev, pomegranate and coriander.
Serve it like this

Fill katoris at the table on a large platter, curd and chutneys drizzled, sev heaped and pomegranate on top. Serve at once.
