Ingredients

4 servings
Raw jackfruit (young green jackfruit)500 g raw jackfruit, peeled and cubed
Mustard oil3 tbsp
Whole spices1 bay leaf, 2 cloves, 1 small cinnamon stick
Cumin seeds½ tsp
Onion2 medium, finely chopped
Ginger garlic paste1 tbsp
Green chilli2, slit
Tomato2, pureed
Turmeric (ground turmeric)½ tsp
Red chilli powder (indian red chili powder)1 tsp
Coriander powder (ground coriander)2 tsp
Garam masala1 tsp
Water¾ cup
Saltto taste
Coriander leaves (cilantro)a handful, chopped

Method

5 steps
  1. 1Oil your palms and knife. Peel the jackfruit, cut it into 2 cm cubes and pressure cook with a little salt, turmeric and water for 1 whistle. Let the pressure release naturally and drain.
  2. 2Heat the mustard oil until it smokes lightly, cool for a moment, then shallow fry the jackfruit until golden on most sides. Lift out.
  3. 3In the same oil, crackle the whole spices and cumin, then fry the onion until deep golden. Add ginger garlic paste and green chillies.
  4. 4Add the tomato puree and powdered spices and cook until the oil separates.
  5. 5Add the jackfruit, salt and water, cover and simmer, then finish with garam masala and coriander.
Serve it like this

Serve hot in a katori with phulkas or paratha, a bowl of dal, sliced onion and lemon on the side.
