Classic kaab el ghazal.

Ingredients

10 servings
Almonds2⅔ cups, blanched and finely ground
Sugar¾ cup
Butter5 tbsp (30 g filling, 40 g dough)
Orange blossom water (orange flower water)3 tbsp
Cinnamon powder½ tsp
Edible gum (gond) (edible gum arabic)a pinch gum arabic, ground
Maida (all-purpose flour, plain flour)2 cups
Egg1

Method

4 steps
  1. 1Knead ground almonds, sugar, 30 g butter, cinnamon, gum and orange blossom water into a smooth paste. Roll into thin 7 cm sticks with tapered ends.
  2. 2Knead flour, salt, the rest of the butter, egg, a splash of orange blossom water and water into a smooth, elastic dough. Rest 20 minutes.
  3. 3Roll the dough paper thin, wrap each almond stick, trim and curve into a crescent. Prick with a pin.
  4. 4Bake at 180 C until just firm and barely coloured.
Serve it like this

Arrange the crescents in a ring on a silver tray, dust lightly with icing sugar and serve with mint tea.
