Ingredients

6 servings
Pork trotters1.5 kg trotters, cleaned
Water10 cups
Soy sauce½ cup
Sugar3 tbsp
Onion1 large, halved
Garlic12 cloves
Gingera thumb, sliced
Spring onion (green onion, scallion)4 stalks
Instant coffee powder1 tsp
Star anise2 pods
Whole spices1 cinnamon stick, 5 peppercorns
Lettucea head, leaves separated
Fish sauce1 tbsp for dipping

Method

4 steps
  1. 1Soak the trotters 1 hour in cold water, then blanch 10 minutes and rinse well.
  2. 2Bring fresh water to a boil with soy, sugar, onion, garlic, ginger, spring onion, coffee and spices.
  3. 3Add the trotters and simmer covered for 2 1/2 hours, turning occasionally.
  4. 4Uncover and reduce, basting, until the skin is glossy; cool slightly and slice off the bone.
Serve it like this

Fan the glossy slices on a board with lettuce, sliced garlic, green chilli, ssamjang and salted shrimp sauce for wrapping.
