Ingredients

3 servings
Pork350 g loin, in thin strips
Soy sauce2 tsp
Cornflour (cornstarch)1 tbsp
Egg white½ egg white
Cooking oil (vegetable oil)2 tbsp
Sweet bean sauce2½ tbsp
Sugar2 tsp
Water2 tbsp
Spring onion (green onion, scallion)a big bunch white parts, or leek, in fine strips
Firm tofuthin tofu skins, or pancakes, to wrap

Method

4 steps
  1. 1Marinate the pork with soy, cornflour and egg white for 10 minutes.
  2. 2Fry the pork in hot oil, stirring to separate, just until white. Lift out.
  3. 3Fry the sweet bean sauce in the oil on low until fragrant, add sugar and water and bubble.
  4. 4Return the pork and toss until glazed. Pile on the spring onion strips and serve with tofu skins to wrap.
Serve it like this

Mound the glossy pork on a plate over a nest of fine spring onion, with tofu skins or pancakes stacked alongside for wrapping.
