Ingredients

Mackerel600 g mackerel or salt mackerel, soaked
Thick coconut milk1⅔ cups
Onion1, sliced
Garlic3 cloves
Tomato2, chopped
Spring onion (green onion, scallion)3, chopped
Dried thyme1 tsp
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1, whole
Allspice4 pimento berries
Lemon juice1 tbsp lime juice
Saltto taste

Method

4 steps
  1. 1Simmer coconut milk until it reduces and oil separates.
  2. 2Add onion, garlic, tomato, spring onion, thyme, allspice and Scotch bonnet.
  3. 3Lay in the fish and simmer 10 minutes.
  4. 4Finish with lime.
Serve it like this
