Ingredients

4 servings
Pork400 g, small cubes with some fat
Rice1½ cups short grain or red rice, soaked 20 min
Onion1 large, finely chopped
Ginger5 cm, ground
Garlic4 cloves, ground
Turmeric (ground turmeric)1¼ tsp
Black pepper1 tsp, coarsely ground
Bay leaf (indian bay leaf)2
Cooking oil (vegetable oil)2 tsp
Saltto taste
Water3 cups

Method

5 steps
  1. 1Heat oil in a heavy pot, add the pork and cook until the fat renders and the meat browns.
  2. 2Add onion, ginger, garlic and bay leaves and fry until the onion softens.
  3. 3Add turmeric and pepper, then the drained rice. Stir until the rice is coated golden.
  4. 4Add hot water and salt, cover and cook on low until the rice is done and the water absorbed.
  5. 5Rest covered 10 minutes and fluff before serving.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
