Ngari80 g nakham (dried fish) or ngari
Dried red chilli4 to 6, roasted
Green chilli4
Ginger2.5 cm, crushed
Garlic5 cloves, crushed
Onion1 small, sliced
Baking soda (bicarb soda, bicarbonate of soda)a pinch, or a little kalchi
Saltto taste
Water3⅓ cups

Method

4 steps
  1. 1Roast the dried fish and chillies on a dry pan or over a flame until smoky.
  2. 2Crush the roasted chillies with ginger and garlic.
  3. 3Boil water with the fish, chilli paste, green chillies, onion and the pinch of soda.
  4. 4Simmer until the fish breaks up, add salt and serve hot.
Serve it like this
