Ingredients

4 servings
Mutton (goat meat)500 g boneless lamb, very thinly sliced
Onion½, grated for juice
Black pepper¼ tsp
Saltto taste
Pita bread2 pide or pitas, cubed
Tomato puree⅔ cup
Butter3½ tbsp
Curd (plain yogurt, natural yoghurt)1¼ cups thick
Kashmiri chilli powder1 tsp
Green chilli4 long chillies, grilled
Tomato1, grilled

Method

5 steps
  1. 1Marinate the thin lamb slices in grated onion juice, pepper and salt for an hour.
  2. 2Simmer the tomato puree with a spoon of the butter, chilli and a splash of water into a pourable sauce.
  3. 3Sear the lamb in small batches in a very hot pan until browned and crisp at the edges.
  4. 4Toast the bread cubes, spread on plates, spoon over some sauce, pile the lamb on top, add more sauce and a big spoon of curd on the side.
  5. 5Heat the remaining butter until foaming and nut brown, and pour it over at the table.
Serve it like this

Arrange bread cubes, lamb and sauce on a warm plate, yoghurt on the side, grilled chilli and tomato on top. Pour brown butter over.
