Ingredients

6 servings
Pork belly700 g, in 2 cm thick slices
Soy sauce¼ cup
Calamansijuice of 8 calamansi (or 2 limes)
Garlic6 cloves, crushed
Brown sugar1½ tbsp
Tomato ketchup (ketchup)3 tbsp banana ketchup or tomato ketchup
Black pepper1 tsp
Vinegar¼ cup cane vinegar
Onion1 small, diced
Green chilli2 bird's eye chillies

Method

4 steps
  1. 1Mix soy, calamansi, half the garlic, sugar, ketchup and pepper; marinate pork overnight.
  2. 2Make the sawsawan: vinegar with a splash of soy, onion, remaining garlic and chilli.
  3. 3Grill on medium coals, turning and basting with marinade.
  4. 4Rest 5 minutes and slice into strips.
Serve it like this

Slice and arrange on a banana leaf with garlic rice, sliced tomatoes and a small bowl of spiced vinegar.
