Filipino pork barbecue.

Ingredients

6 servings
Pork800 g pork shoulder, thinly sliced
Soy sauce¼ cup
Calamansijuice of 8 calamansi (or 2 lemons)
Lemon lime soda½ cup
Tomato ketchup (ketchup)⅓ cup banana ketchup or tomato ketchup
Brown sugar¼ cup
Garlic1 head, minced
Black pepper1 tsp
Cooking oil (vegetable oil)1 tbsp, for basting

Method

4 steps
  1. 1Mix soy, calamansi, soda, half the ketchup, sugar, garlic and pepper. Marinate the pork overnight.
  2. 2Thread 4 or 5 slices onto each soaked bamboo skewer.
  3. 3Simmer the leftover marinade with remaining ketchup and oil into a basting sauce.
  4. 4Grill on medium, turning and basting often, until charred and cooked through.
Serve it like this
