Pork ribspork bones or ribs
Water2½ litres
Radish (daikon radish, mooli)daikon, chunks
Onion1, charred
Dried shrimp2 tbsp
Sugarrock sugar or sugar
Fish sauce3 tbsp
Salt1 tsp
Minced pork (pork mince, ground pork)200 g
Prawns (shrimp)8, shell on
Eggquail eggs, boiled
Rice noodlesclear tapioca or rice noodles (hủ tiếu)
Garlic10 cloves, minced
Cooking oil (vegetable oil)for garlic oil
Moong sprouts (mung bean sprouts)bean sprouts
CeleryChinese celery, chopped
Spring onion (green onion, scallion)sliced
Lettuceleaves
Lemonlime wedges

Method

5 steps
  1. 1Blanch the bones 5 minutes, drain and rinse.
  2. 2Simmer the bones with radish, charred onion and dried shrimp for 90 minutes. Season with fish sauce, sugar and salt.
  3. 3Cook the minced pork in a ladle of broth until no pink remains. Poach the prawns 2 minutes.
  4. 4Fry the garlic in the oil until golden.
  5. 5Blanch the noodles and sprouts. Fill bowls with noodles, garlic oil, pork, prawns, eggs and ribs, then ladle over the broth. Top with celery and spring onion.
Serve it like this

Serve in a big bowl with toppings arranged neatly, garlic oil glinting. Lettuce, sprouts, lime and chilli on a side plate.
