Ingredients

4 servings
Banana6 small ripe but firm bananas
Sabudana (tapioca pearls)¼ cup small pearls, soaked
Thick coconut milk¾ cup
Thin coconut milk1¼ cups
Sugar5 tbsp
Salta pinch
Pandan leaves1 leaf, knotted
Peanuts2 tbsp, roasted and crushed
Sesame seeds1 tsp, toasted

Method

4 steps
  1. 1Slice bananas, toss with 1 tbsp sugar and rest 15 minutes.
  2. 2Simmer thin coconut milk with pandan, remaining sugar and salt. Add sago and cook, stirring, until clear.
  3. 3Add bananas and simmer 3 minutes. Stir in thick coconut milk and heat through.
  4. 4Serve warm topped with peanuts and sesame.
Serve it like this

Ladle warm into small bowls, scatter crushed peanuts and sesame on top. Serve warm or chilled.
