Prawns (shrimp)1 kg large prawns, shell and head on
Saltcoarse sea salt
Olive oil2 tbsp
Garlic2 cloves, minced
Flat leaf parsleychopped
Lemonwedges

Method

5 steps
  1. 1Mix oil, garlic and parsley.
  2. 2Heat a griddle or heavy pan until smoking. Scatter coarse salt over it.
  3. 3Lay the prawns on the salt and cook without moving.
  4. 4Flip and cook the other side, then drizzle with the garlic oil.
  5. 5Serve straight away with lemon.
Serve it like this

Pile on a warm platter with lemon wedges, a bowl for shells and bread. Serve sizzling.
