Ingredients

4 servings
Pork600 g, with some fat, cubed
Colocasia (taro root, eddoes)300 g arbi, peeled and halved
Onion1 large, sliced
Ginger garlic paste2 tbsp
Green chilli4, slit
Turmeric (ground turmeric)1 tsp
Black pepper½ tsp
Mustard oil1 tbsp
Saltto taste
Water1⅔ cups

Method

4 steps
  1. 1Heat mustard oil and add the pork. Cook on medium until the fat renders and the pork browns.
  2. 2Add onion, ginger garlic paste, turmeric, chillies and pepper. Fry until the onion is soft.
  3. 3Add water and salt. Cover and cook on low until the pork is nearly tender.
  4. 4Add the colocasia and cook covered until it is soft and starts to thicken the gravy.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
