Ingredients

4 servings
Minced beef (beef mince, beef or buff keema)beef mince
Onion1 large; most chopped for chili, some raw to top
Garlic3 cloves
Kashmiri chilli powder1½ tbsp chili powder
Cumin powder (ground cumin)2 tsp
Dried oregano1 tsp
Tomato puree¾ cup
Beef stock (beef broth)1¼ cups
Maize flour (fine yellow cornmeal)2 tbsp masa or cornmeal, to thicken
Saltto taste
Tortilla chipscorn chips
Cheddar cheese1¼ cups, grated
Jalapeñopickled or fresh, sliced

Method

4 steps
  1. 1Brown the beef in a heavy pot, breaking it up. Add most of the onion and cook until soft, then garlic and spices.
  2. 2Add tomato puree and stock and simmer 20 minutes.
  3. 3Sprinkle in the cornmeal and simmer 5 more minutes. Season.
  4. 4Pile corn chips in bowls, ladle chili over and top with cheddar, raw onion and jalapeños.
Serve it like this

Serve in deep bowls or straight in a split chip bag, with chili ladled in, cheese, onions and jalapeños on top. Forks only.
