Ingredients

Maida (all-purpose flour, plain flour)2 cups
Sugar2 cups for cake, about 3 1/2 cups powdered for icing
Butter1 cup, divided
Cocoa powder (unsweetened cocoa powder)½ cup, divided
Water1 cup
Buttermilk½ cup
Egg2
Baking soda (bicarb soda, bicarbonate of soda)1 tsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)2 tsp, divided
Cinnamon powder½ tsp
Salta pinch
Milk6 tbsp, for icing
Pecans1 cup, chopped

Method

5 steps
  1. 1Heat the oven to 180°C and grease a large sheet pan, about 25 x 38 cm.
  2. 2Bring half the butter, half the cocoa and the water to a boil, then whisk into the flour, 2 cups sugar, soda, cinnamon and salt.
  3. 3Whisk in buttermilk, eggs and half the vanilla. Pour into the pan and bake 18 to 20 minutes.
  4. 4Five minutes before the cake is done, boil the remaining butter, cocoa and milk, then whisk in the powdered sugar, vanilla and pecans.
  5. 5Pour the icing over the hot cake and spread at once. Cool before cutting.
Serve it like this

Cut into squares straight from the pan and serve at room temperature, with cold milk or a scoop of vanilla ice cream.
