Ingredients

4 servings
Wonton wrappers25 square wrappers
Chicken mince (ground chicken)250 g
Carrot½ small, grated
Spring onion (green onion, scallion)2 stalks, finely sliced
Garlic3 cloves, minced
Ginger2.5 cm, grated
Soy sauce2 tsp
White pepper¼ tsp
Cornflour (cornstarch)1 tsp
Salt¼ tsp
Cooking oil (vegetable oil)for deep frying (about 3 tbsp absorbed)
Sweet chilli sauce4 tbsp, to serve

Method

5 steps
  1. 1Mix the chicken, carrot, spring onion, garlic, ginger, soy sauce, pepper, cornflour and salt until sticky.
  2. 2Place a teaspoon in the centre of each wrapper, wet the edges and fold into a triangle. Press out the air, then bring the two side corners together and pinch.
  3. 3Heat the oil in a kadai to 175°C. Slide the wontons in gently, away from you, 6 to 8 at a time.
  4. 4Fry 3 minutes, turning, until golden. Drain on a rack. Cut one open to check the chicken is cooked through with no pink.
  5. 5Serve hot with sweet chilli sauce.
