Method

1Brew the coffee powder with the boiling water in a filter for 15 minutes. Stir 20 g sugar and the milk into the decoction and cool completely.
2Whip the cold cream with 20 g sugar in a chilled bowl to soft peaks.
3Beat the mascarpone with the remaining sugar and the cardamom for 1 minute until smooth, then fold in the whipped cream.
4Dip each ladyfinger in the coffee for about 1 second a side and lay them in a 20 cm square dish. Spread half the cream. Repeat with a second layer.
5Cover and chill in the fridge for at least 6 hours.
6Dust with cocoa and scatter chocolate shavings just before serving.
Serve it like this
Cut a clean square and lift it onto a small plate so the layers show. Dust a little extra cocoa over and serve with a tiny steel tumbler of filter coffee.
