Ingredients

Chicken, curry cut (bone in chicken, small pieces)1 kg, bone in
Onion1, halved
Baharat1½ tsp
Rice1 cup, rinsed
Pita bread3 pitas, torn into squares
Cooking oil (vegetable oil)2 tbsp, for the bread
Curd (plain yogurt, natural yoghurt)2 cups thick yoghurt
Tahini2 tbsp
Garlic3 cloves, crushed
Lemon juice1½ tbsp
Ghee2 tbsp
Pine nuts3 tbsp
Almonds2 tbsp, slivered
Flat leaf parsleyto garnish
Saltto taste

Method

6 steps
  1. 1Poach the chicken with onion, baharat and salt in the water until tender and no pink remains. Lift out, shred and keep the broth.
  2. 2Cook the rice in 2 cups of the broth until fluffy.
  3. 3Toss the pita squares with oil and bake at 200°C until crisp.
  4. 4Whisk yoghurt with tahini, garlic, lemon and salt.
  5. 5Layer the bread in a dish, moisten with a ladle of hot broth, add rice and chicken, then spoon over the yoghurt.
  6. 6Fry pine nuts and almonds in ghee until golden and pour, sizzling, over the top. Scatter with parsley.
Serve it like this

Serve in a wide shallow dish, nuts and parsley on top, straight after the ghee goes on so it sizzles at the table.
