Ingredients

6 servings
Maida (all-purpose flour, plain flour)1⅔ cups
Rava (semolina)3 tbsp
Ghee3 tbsp
Ajwain (carom seeds)¼ tsp
Black pepper1 tsp, coarsely crushed
Cumin seeds½ tsp
Saltto taste
Waterabout 1/3 cup
Cooking oil (vegetable oil)for frying, about 3 tbsp absorbed

Method

4 steps
  1. 1Rub ghee into flour, rava, ajwain, pepper, cumin and salt.
  2. 2Add water and knead a stiff dough; rest 20 minutes.
  3. 3Roll small puris, make slits with a knife and press in a little pepper.
  4. 4Fry on low heat until crisp and pale golden.
Serve it like this
