Ingredients

8 servings
Green split peas500 g, rinsed
Water8 cups
Pork ribs500 g pork ribs or a pork hock
Celeriac (celery root)½ small, diced
Leek2, sliced
Carrot2, diced
Onion1 large, diced
Potato2, diced
Celeryleaves and a stick, chopped
Bay leaf (indian bay leaf)2
Smoked sausage1 rookworst, sliced
Saltto taste
Black pepper½ tsp

Method

5 steps
  1. 1Simmer the split peas and ribs in the water with bay, skimming the foam.
  2. 2Add celeriac, leek, carrot, onion and potato. Simmer, stirring often.
  3. 3Remove the ribs, strip the meat and return it to the pot.
  4. 4Add the sliced rookworst and celery leaves and simmer 10 minutes.
  5. 5Season and serve, or better, cool and reheat tomorrow.
Serve it like this

Ladle into deep bowls with slices of rookworst on top. Serve with rye bread and thin slices of bacon.
