Ingredients

6 servings
Rice flour1½ cups, roasted
Waterabout 1 cup, hot
Salta pinch
Coconut oil1 tsp
Fresh grated coconut1½ cups
Jaggery⅔ cup, grated
Cardamom½ tsp
Ghee1 tsp

Method

5 steps
  1. 1Melt jaggery with a splash of water, strain, and cook with coconut until thick; add cardamom and ghee.
  2. 2Mix rice flour, salt and oil with hot water to a soft dough.
  3. 3Wilt banana leaf pieces over a flame; spread a thin layer of dough on each with wet fingers.
  4. 4Spoon filling on one half, fold the leaf over and press the edges.
  5. 5Steam for 12 to 15 minutes.
Serve it like this

Serve warm in the open leaf, folded back to show the filling, with tea.
