Chakka ada as Kerala homes make it in jackfruit season.

Per serving, worked out from the ingredient table. Grandma's way is the starting point the other versions are compared with.

Rice flour1½ cups roasted rice flour
Waterabout 1 cup, hot
Salta pinch
Ripe jackfruit15 bulbs, seeded and chopped
Jaggery½ cup, grated
Fresh grated coconut¾ cup
Ghee1 tbsp
Cardamom½ tsp
Banana leaves6 pieces

Method

5 steps
  1. 1Mix rice flour and salt with hot water to a soft, smooth dough. Cover and rest.
  2. 2Cook jackfruit with jaggery and 2 tbsp water until soft and jammy. Add coconut, ghee and cardamom and cook until dry.
  3. 3Wilt banana leaf pieces over a flame. Spread a thin layer of dough on each with wet fingers.
  4. 4Spoon filling on one half and fold the leaf over. Press the edges gently.
  5. 5Steam for 15 minutes until the dough turns translucent.
Serve it like this

Serve warm in its leaf, unfolded at the table so the steam and fragrance escape.
