Ingredients

12 servings
Urad dal (split black gram)1 cup, washed, soaked 4 hours
Ghee¾ cup
Edible gum (gond) (edible gum arabic)2 tbsp
Sugar1 cup, powdered
Almonds⅓ cup, chopped
Cardamom½ tsp

Method

4 steps
  1. 1Drain the dal well and grind coarse without water.
  2. 2Fry the gond in 2 tbsp ghee until it puffs, then crush.
  3. 3Roast the dal in the remaining ghee on low heat, stirring constantly, until deep golden and fragrant.
  4. 4Cool until warm, mix in sugar, gond, almonds and cardamom and press into 12 pinnis.
Serve it like this

Serve one pinni on a saucer with a glass of warm milk or tea on a winter morning.
