Ingredients

4 servings
Poha (flattened rice)2 cups thin poha
Fresh grated coconut½ cup, fresh
Onion1 small, finely chopped
Tomato1 small, finely chopped
Green chilli2, chopped
Lemon juice1 tbsp
Sugar1 tsp
Saltto taste
Coriander leaves (cilantro)a handful
Cooking oil (vegetable oil)1 tbsp
Mustard seeds1 tsp
Asafoetidaa pinch
Turmeric (ground turmeric)¼ tsp
Curry leaves1 sprig
Peanuts2 tbsp

Method

4 steps
  1. 1In a big bowl, mix the thin poha with coconut, onion, tomato, chilli, lemon, sugar, salt and coriander. Do not add water.
  2. 2Press the mixture down, cover with a plate and put a weight on top. Rest.
  3. 3Heat oil, fry peanuts, splutter mustard, add asafoetida, curry leaves and turmeric. Pour over the poha.
  4. 4Toss gently and serve straight away.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
