Ingredients

4 servings
Potato4 medium, boiled and cubed
Cooking oil (vegetable oil)2 tbsp
Mustard seeds1 tsp
Cumin seeds½ tsp
Asafoetidaa pinch
Curry leaves10 to 12
Green chilli3, chopped
Ginger1.5 cm, grated
Turmeric (ground turmeric)½ tsp
Sugar½ tsp
Lemon juice1 tbsp
Fresh grated coconut2 tbsp
Coriander leaves (cilantro)a handful
Saltto taste

Method

4 steps
  1. 1Boil, peel and cube the potatoes into rough pieces.
  2. 2Heat oil, crackle mustard and cumin, add asafoetida, curry leaves, chilli and ginger.
  3. 3Add turmeric, then potatoes, salt and sugar. Toss gently on medium for 3 to 4 minutes.
  4. 4Finish with lemon, coconut and coriander.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
