Butter4 tbsp
Olive oil1½ tbsp
Maida (all-purpose flour, plain flour)80 g for the béchamel, 40 g for coating
Milk2½ cups, warm
Cooked ham120 g jamón or cooked ham, finely chopped
Onion½ small, finely chopped
Whole spicesa pinch of nutmeg
Egg2, beaten
Breadcrumbs1 cup
Cooking oil (vegetable oil)for frying, about 60 g stays in

- 1Melt butter with olive oil and soften the onion. Add the ham, then 80 g flour and stir 2 minutes.
- 2Add warm milk gradually, stirring constantly, and cook until very thick. Season with nutmeg and salt.
- 3Spread on a tray, cover with film touching the surface and chill overnight or at least 4 hours.
- 4Shape into small logs, roll in flour, then egg, then breadcrumbs.
- 5Fry in hot oil a few at a time until deep golden. Drain.
Serve it like thisPile on a plate with a lemon wedge, or line up on a board for sharing. Serve hot, warning that the centre is molten.
