Dark chocolate (bittersweet chocolate)120 g, chopped
Butter2 tbsp, plus more for the ramekins
Egg yolk3
Egg white4
Sugar5 tbsp, plus extra to coat
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp

- 1Heat the oven to 200 C with a tray inside. Brush 4 ramekins with butter in upward strokes and coat with sugar.
- 2Melt the chocolate and butter gently. Cool slightly, then stir in the yolks and vanilla.
- 3Whisk the whites with salt to soft peaks, then add the sugar gradually until glossy and firm but not dry.
- 4Stir a third of the whites into the chocolate to loosen, then fold in the rest gently.
- 5Fill the ramekins to the top, level, and run a thumb round the rim. Bake on the hot tray 12 to 14 minutes.
- 6Dust with icing sugar and serve at once.
