Ingredients

2 servings
Potato3 large, cut into chips
Cooking oil (vegetable oil)for frying (about 40 ml absorbed)
Egg5
Saltto taste
Tomato1, diced, for kachumbari
Onion½, sliced, for kachumbari

Method

4 steps
  1. 1Fry the chips until golden and crisp. Salt them.
  2. 2Beat the eggs with salt.
  3. 3Put the chips in an oiled pan, pour the eggs over and cook until set underneath, then flip.
  4. 4Serve with tomato and onion kachumbari and chilli sauce.
Serve it like this

Slide onto a plate, cut into wedges and serve with kachumbari, ketchup and chilli sauce.
