Button mushroom300 g button mushrooms, halved
Cornflour (cornstarch)3½ tbsp, split
Maida (all-purpose flour, plain flour)1½ tbsp
Cooking oil (vegetable oil)for frying, about 3 tbsp absorbed
Garlic5 cloves, chopped
Ginger1.5 cm, chopped
Green chilli2, slit
Onion1, cut into petals
Capsicum (green capsicum, green bell pepper)1, cubed
Soy sauce1 tbsp
Red chilli sauce1 tbsp
Tomato ketchup (ketchup)2 tsp
Vinegar1½ tsp
Water¼ cup
Spring onion (green onion, scallion)2 stalks, chopped

- 1Wipe the mushrooms clean, do not soak. Toss with 2 1/2 tbsp cornflour, the maida, salt and a splash of water.
- 2Shallow fry until golden and crisp. Drain.
- 3In 1 tbsp oil on high, fry garlic, ginger and chilli, then onion and capsicum for a minute.
- 4Add soy, chilli sauce, ketchup and vinegar, then the remaining cornflour mixed into the water. Bubble until glossy.
- 5Toss in mushrooms and spring onion and serve hot.
Serve it like thisServe hot on a plate, with a few fresh coriander leaves on top.
