Ingredients

4 servings
Chicken wings12 wing drumettes, frenched into lollipops
Ginger garlic paste1½ tbsp
Kashmiri chilli powder2 tsp
Soy sauce1 tbsp
Vinegar2 tsp
Egg1
Cornflour (cornstarch)4½ tbsp
Maida (all-purpose flour, plain flour)2 tbsp
Red chilli sauce1½ tbsp
Black pepper½ tsp
Cooking oil (vegetable oil)for deep frying, about 5 tbsp absorbed

Method

5 steps
  1. 1Push the meat on each drumette down to one end with a knife to form a lollipop, or ask your butcher to do it.
  2. 2Mix ginger garlic paste, chilli powder, soy sauce, vinegar, chilli sauce, pepper and salt. Coat the chicken and rest 30 minutes.
  3. 3Add egg, cornflour and maida to make a thick coat.
  4. 4Fry in medium hot oil in batches for 8 to 10 minutes until crisp and cooked through, with no pink near the bone.
  5. 5Wrap the bones in foil and serve hot with schezwan sauce.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
