Classic chhena jhili.

Ingredients

6 servings
Chhenafrom 1 1/4 litres milk
Rava (semolina)1½ tbsp
Maida (all-purpose flour, plain flour)1 tbsp
Gheefor frying, about this much is absorbed
Sugar1½ cups
Water3 cups
Cardamom¼ tsp

Method

4 steps
  1. 1Knead chhena with rava and maida until smooth and shape 15 small flat discs.
  2. 2Boil sugar, water and cardamom 5 minutes into a light syrup.
  3. 3Fry in ghee on medium low heat until deep golden brown.
  4. 4Soak in warm syrup for 1 hour.
Serve it like this

Serve three discs in a small bowl with a spoon of syrup, warm or at room temperature.
