Ingredients

6 servings
Chhenafrom 1 litre milk
Rava (semolina)1½ tbsp, fine
Gheefor frying, about this much is absorbed
Milk5 cups, full cream
Sugar⅔ cup
Cardamom½ tsp

Method

4 steps
  1. 1Simmer milk 30 minutes until reduced by about half. Stir in sugar and cardamom.
  2. 2Knead chhena with rava and shape 12 flat discs, about 6 cm wide.
  3. 3Fry on medium low heat until reddish brown on both sides.
  4. 4Soak the hot discs in warm milk for 1 hour.
Serve it like this

Serve two discs in a small bowl with plenty of milk spooned over and a pinch of cardamom on top.
