Ingredients

8 servings
Cream cheese225 g, softened
Cheddar cheese1½ cups, finely grated
Spring onion (green onion, scallion)2 stalks, finely chopped
Garlic1 small clove, grated
Prepared mustard1 tsp
Black pepper¼ tsp
Pecans⅔ cup, toasted and chopped (or walnuts)
Flat leaf parsley3 tbsp, chopped
Water crackersto serve

Method

4 steps
  1. 1Beat cream cheese until soft, then mix in cheddar, spring onion, garlic, mustard and pepper.
  2. 2Scrape onto cling film, gather into a ball and chill at least 1 hour.
  3. 3Mix toasted nuts and parsley on a plate and roll the ball to coat completely.
  4. 4Rest 15 minutes at room temperature before serving with crackers.
Serve it like this

Set the ball in the middle of a board with crackers fanned around it and a small knife stuck in, ready for guests to dig in.
