Beef500 g sirloin, sliced paper thin
Soy sauce2½ tbsp
Pear½, grated
Garlic4 cloves, grated
Brown sugar1 tbsp
Sesame oil2 tsp
Black pepper¼ tsp
Cooking oil (vegetable oil)1½ tbsp
Onion2, thinly sliced
Capsicum (green capsicum, green bell pepper)1, thinly sliced
Provolone8 slices
Baguette (french bread roll)2 baguettes, each cut in half
Gochujang1 tbsp
Mayonnaise2½ tbsp
Napa cabbage kimchi½ cup, chopped
Spring onion (green onion, scallion)2 stalks, sliced
Method
6 steps
1Freeze the beef for 20 minutes, then slice as thin as you can, unless it is already sliced.
2Mix the soy, pear, garlic, brown sugar, sesame oil and pepper. Toss with the beef and rest 15 minutes.
3Cook the onion and capsicum in half the oil in a wide pan on medium high heat for 6 minutes.
4Push them aside, add the rest of the oil and the beef on high heat. Cook 3 minutes, chopping with a spatula, then mix in the onions.
5Divide into 4 long piles, lay 2 slices of provolone on each and cover the pan for 1 minute.
6Split and toast the baguettes on a pan on medium heat. Spread with gochujang mixed into the mayo, then scoop in a pile of beef and cheese. Top with kimchi and spring onion.
Serve it like this
Cut each roll on a sharp diagonal and stand the halves cut side up on a board so the cheese and beef show. Kimchi on top, extra gochujang mayo in a dip pot.
