Ingredients

3 servings
Garlic chivesa big bunch, 5 cm lengths
Maida (all-purpose flour, plain flour)1 cup
Water¾ cup, ice cold
Salt½ tsp
Onion½ small, thinly sliced
Fresh red chillies (fresh red chiles)1, sliced
Cooking oil (vegetable oil)3 tbsp
Soy sauce1½ tbsp, for dipping
Vinegar2 tsp, for dipping

Method

4 steps
  1. 1Whisk flour, salt and ice cold water into a thin batter.
  2. 2Fold in the chives and onion so they are just coated.
  3. 3Spread thinly in a hot oiled pan, dot with chilli and fry 3 to 4 minutes a side, pressing down.
  4. 4Cut into squares and serve with soy and vinegar.
Serve it like this
