Ingredients

6 servings
Rice flourshort grain rice flour, wet milled if possible
Salt½ tsp
Waterabout 3/4 cup, boiling
Matcha powder1 tsp, for a green batch (or mugwort powder)
Sesame seeds6 tbsp, toasted
Sugar2½ tbsp
Honey1½ tbsp
Sesame oil1 tbsp, for brushing

Method

5 steps
  1. 1Mix the rice flour and salt, then add boiling water a little at a time and knead into a smooth, soft dough. Colour half with matcha.
  2. 2Grind the sesame seeds roughly with the sugar and mix in the honey.
  3. 3Roll walnut sized pieces into balls, press a cup with your thumb, fill with 1/2 tsp filling and seal into a half moon.
  4. 4Steam on a damp cloth, or on pine needles if you have them, for 20 minutes.
  5. 5Rinse quickly in cold water and brush with sesame oil while warm.
Serve it like this

Arrange the white and green half moons on a wooden tray or plate, a few pine needles for show. Serve with tea or sikhye.
